These chocolate cookies are pillowy soft. The addition of velvety ganache and buttery Heath Toffee Bits adds just the right amount of texture and richness.

Directions

In a mixing bowl, cream butter and sugar until light and fluffy (about 3 minutes).

Add in the eggs, one at a time, beating well after each addition.

Beat in vanilla and mix well to combine.

In a medium bowl, combine the flour, cocoa, baking soda and salt, and whisk until incorporated.

Gradually add the dry ingredients to the butter and sugar, mixing on low until fully mixed.

Cover the dough and refrigerate for 2 hours. This will make the dough easier to handle.

When ready to bake, preheat oven to 350 degrees F and line baking sheets with parchment paper.

Roll dough into 1-inch balls.

Place dough balls 2 inches apart on prepared baking sheets.

Bake at 350 degrees F for 8-10 minutes or until the edges are firm.

Remove to wire racks to cool completely.
